The course is designed as a follow on from the more basic cup cake courses. The designs will take longer to complete and are more intricate. This will help to develop your skills and give further ideas for designs.

We will be decorating some cup cakes using buttercream and some that are flat iced. You will learn how to prepare and fill the cakes, and then decorate tastefully. All decorations will be hand made and you will have access to lots of cutters and equipment on the day. This will enable you to ‘play’ with everything at your finger tips.

This class would be more suitable for those who already have some knowledge of sugarcraft. Each technique will be fully explained and help will be given to individuals throughout.

During this class you will learn how to work with Royal Icing and sugar paste to produce high quality lettering using a wide range of techniques.

Good piping techniques are an essential part of every cake decorators skill set, so we will start by teaching you how to make your own piping bags (which saves a lot of money!), and which nozzles to use for different jobs.

Learn how to draft your designs before applying them to a cake, obviously it is important to ensure that your lettering will end up exactly where you want it to be! but through practice and the techniques you will learn during this class, you will be inspired to create a myriad of designs of your own!

Royal icing has many uses in the cake decorating world from piping simple scrolls, to run-outs, lettering, Cornelli, lacework and more. It is important that you understand the different consistencies of this wonderful medium, so we will give you a complete run down of stiff peak, soft peak and runny icing, and when you should use the different types.

Through the use of piping techniques, cutters, tap pits and painting, you will leave our class feeling confident that you can produce high quality writing on cakes and sugar craft in your chosen medium.
